How to Make the Overstuffed Mediterranean Omelet
Mornings can be rough! There is no doubt about it! But, wouldn’t a simple, healthy, homemade breakfast make it just a little easier?
Check out the overstuffed mediterranean omelet recipe for a quick and nutritious start to your morning. Just the name sounds yummy!
While I am sure you are saying you don’t have time cook breakfast, I am here to tell you that you do have time. To make this recipe, it takes a whole 5 minutes! Pouring cold cereal into a bowl and adding milk and sugar takes that amount of time! But, by making an overstuffed mediterranean omelet, you can have something that warms your belly, fills you up, and is good for you too.
The recipe calls for 1 teaspoon of olive oil, 1 cup of fresh baby spinach, ½ cup of sun-dried tomatoes, 1 clove of garlic, ½ teaspoon of salt, 3 large eggs, and ½ cup of feta cheese; very Mediterranean indeed. You add all the ingredients except the eggs to a skillet with olive oil in it. You cook them up, but don’t overdue it. You don’t want the spinach to wilt. Once done, remove the mixture and put aside.
You then add the eggs to the oil and cook for about 1 minute. When done, top the eggs with the spinach mixture and feta cheese and fold in half. That is all there is to it. Healthy, nutritious, and easy to make; you can’t beat it.
And, for those of you who cannot spare even 5 minutes in the morning, you can make it the night before and just heat up in the microwave in the morning. I bet this recipe would be good for lunch or even a light dinner too.
